Gills of the fish can only breath oxygen in water. Not from the Air as Humans and Animals do.

because the gills stick together and therefore have no access to air.
The gills are what the fish use to "breathe"- they work OK so long as water keeps passing through them- which means it "combs" through the gills allowing for the oxygen exchange. When out of the water the humid gills stick together and the fish has no mechanism to pump the air through the gills to effect the oxygen exchange.

Fishes absorb oxygen present in water, this is accomplished by the gills!. Fishes cannot breath the gaseous oxygen present in the atmosphere

The gills are the processors of oxygen from water and do not function properly in open air----much in reverse of what human lungs experience when filled with water---they are not suited for that type of processing !
