I have heard it as "for every action, there is an equal and opposite reaction" As for people and environment. Someone cuts down a forest- what happens? Soil biodiversity changes, animal species in that area change, CO2 consumption in that area decreases.
People put more black top up- absorbs and reflects heat warming the earth's surface more. There are a ton of examples, I am not sure what you are looking for specifically.

It's Sir Isaac Newton's third law of motion. "To every action (force applied) there is an equal and opposite reaction (equal force applied in the opposite direction).
Another way of stating Newton's third law, an interaction between two objects, is that, if object A exerts a force on object B, object B will exert the same magnitude force on A, but in the opposite direction."

When we press the keys on our keyboard, the keys apply an equal but opposite force back at us. We made the action, and the keys made the reaction. But this is relative and subjective. Just as motion is relative, we can say the keys applied force on our fingers and our fingers reacted by applying an equal but opposite force back at the keys at the same time. Therefore, there is no single receiver or single applier of force, for both receive and apply force simultaneously.

It's jst like saying you can't touch without being touched.

It doesn't really. But popular science, like the newspaper, distorts fundamental ideas, such as Newton's law of motion, into whatever bit of popular nonsense it wants to.

There is no direct application of Newton's law of motion that applies to people and their environment. With the possible exception of people being propelled forward by their farts. And a fart that large would probably adversely effect the environment.

It's called consequences. For everything that you do or decide there will be a reaction to that decision. that reaction will effect the lives of others and cause a ripple effect in countless lives of others in and around your life.
