What would be the difference(s) and why?

I would change a LOT:
No more useless organs --> get rid of coccyx and appendix(why do people need to get surgery when useless organs malfunctions?)
Move the prostate ANYWHERE else but where it is(why do we have to piss blood if something goes wrong with it?)
Separate sex and urination function in males(who the hell puts waste pipes in recreational areas?)
No more menstruation for women(do women REALLY have to bleed every month to be able to have kids?)
More durable teeth!
Move up the epiglottis(humans are the only animal that can choke to death because of poor epiglottis location)
Tougher skin(Humans are one of a few species that get sunburn)
....
And a lot more!

If I were God, I'd invest a property into the human body that physically changed when a person was dishonest, destructive, or selfish. Not painful, just obvious and maybe a bit inconvenient. Sort of like Pinnochio's nose growing when he lied. If humans had instant and direct consequence for their misdeeds, they'd probably rethink their motives before acting. Other humans would have the same advantage, knowing an bad person when they saw him, literally.
Not sure what type of world we'd end up with, but it would sure be more honest.
Oh, and I'd redesign the knee. Current design sucks.

I wouldn't change man at all, but I would teach sheep to cook. That or I would create man with sufficient knowledge and intellect that he had no need to create god.

I would give them a vagina and then they would be perfect...oh wait a second :) Actually, I think I would make humans able to regenerate. Oh, and more colors, too. I'd like to be hot pink. That would be cool. Oh and a hundred year million mile warranty. And death would never been painful.

I'd get rid of the tail bone, one of the remnants of man's reptillian primitive past, along with other non-essential organs (appendix, spleen, to name a few).

Certain parts (I'm sure you know which ones) could look more appetising to women then men would not complain that we don't go down there enough. This might have saved many marriages!

On the female, I would put the exhaust further away from the intake because they really don't like that "oops, wrong hole" excuse.
