Fair play to all answers below, especially Guyer (it rocks), But I cannot believe no one has said NINJA SCROLL yet, as a series and feature film. It just kicks a**e!
There is also the TV program ONE PIECE. Another class piece of animation breaking into this country.
I enjoy them just purely down to the amazing animation that is so unique to the cartoon world.

Fullmetal Alchemist. It's practically the only anime series I've seen - except rubbish stuff like Sailor Moon when I was little, and a few Miyazaki films recently - and I really like the art style. Plus I'm a bit of a dork and quite like the Alchemy aspect.
It's funny, sad at times - Episode 25! - and can be a bit gory - Scar & his murders made me twitch a bit - but I like the action. I can't stand shoujo, it makes my brain go squishy from the idiocy, so FMA and Naruto are practically the only really mainstream anime I can stand. Even Inuyasha got on my nerves after three episodes. Slayers wasn't bad, but I gave up looking for it.
I'd love to read the manga but it's the ONE manga that isn't sold here, so I haven't read it yet. But it looks even better than the anime!

Saiyuki.
(Gensomaden Saiyuki. Saiyuki Reload, Gunlock)
The story is a Chinese classic, journey to the West, spiced up.
So the story line is nice.
I also love their refrences to their past and how it affects the story; the characters are very well constructed.
The drawings are awesome. The style of the original artist is maintained even in the anime. Plus there weren't many female artists at the time Saiyuki came out, K Minekura showed how her style could gather fans worldwide.
I also love some degree of absurdity in the stories, such as a dragon that transforms itself into a jeep, or paying by gold card in the smallest villages (in a setting of centuries ago)... But it all just fits.
The sound tracks for the anime were awesome, I simply love 'Alone'.
(Do a google search, and listen to the piano version)
Finally, Kanzeon Bosatsu is just so sexy, in physical appearance and behaviour :)

Ahh I have to pick one????
OK my favourite anime at the moment is probably Bleach (except I'm also getting really into Prince of Tennis at the moment). Why? Hmmm.... I enjoy both the action and the humour that runs through Bleach but it also has darker undertones to it as well to keep it interesting to an adult audience.
My favourite manga is probably Fruits Basket or Banana Fish (very different styles I know) Fruits Basket makes me laugh but also has some great characters (my favourite is probably Kyo)
Banana Fish is much darker and action packed but still has interesting character development underlying the packed plot.

I have many animes / mangas that I like, but these two have their very own reason:
1. Digimon (anime, all seasons)
At first, I don't like the idea of seeing a Pokemon-like anime, where kids meet monsters and fought together and the like. However, Digimon was nothing like a very optimistic plot line as Pokemon has, it has deaths that changed people, some of the characters are somewhat similar to what I had always thought myself as - dark, pessimistic, being emo and useless. It taught me that being all-negative is not a bright solution, while being too optimistic always lead to serious problems. Besides, some of them look cool :D
2. Kindaichi Shounen no Jikembo / Young Kindaichi's Case Files (manga)
This one is my art "teacher" :D I love to draw, and at first I used to "copy" people's drawings. This manga's art is... half-realistic, making me want to re-draw parts of it (people, or things). As a teacher, it's the first that taught me how to draw boys (before it, I copied Sailormoon's style but I can't stand seeing the boys XD)
Of course I do have others, but these two are the ones changing my life and art style :D

Cardcaptor Sakura
Because the show is full of humour, suspense and romance. Once u watch it for the first time, u want to watch the next episode..
The Summary of the anime
The show begins when ten-year-old Sakura Kinomoto opens a mysterious book in her father's study and accidentally lets loose the magical Clow Cards. By her ability to open the seal, Sakura is revealed to have special powers, and it becomes her responsibility to retrieve the missing cards. The task involves finding each card, battling its magical personification, and sealing it away. She is assisted by Kero, the Beast of the Seal assigned to protect the cards. Kero who looks like an animated plush toy throughout most of the series, guides Sakura as she develops her Cardcaptor powers. Sakura's classmate and best friend Tomoyo Daidouji assists in designing Sakura's battle costumes and filming her adventures. Sakura also competes with Syaoran Li, the descendant of the Clow Cards' creator, Clow Reed, in capturing the Cards. Later on, Syaoran has fall in love with Sakura and tries to find a way to admit his feelings to her.

My two favorite animes are Cardcaptors and Full Moon wo Sagashite. The reason I like Cardcaptors is because the outfits Sakura wears are sooo kawaii!!! ^_^ Also, after the first episode, I was hooked! XD The plot is really kawaii and Sakura and Li look so adorable together lolz. But the reason I like Full Moon is 'cuz it teaches many important lessons throughout the series and it's a tear-jerker. :D

My favourite has to be dragon ball z because of the aura, the golden hair( future trunks especially) the muscular body, but on top of that the will to fight against evil....the second one is saint seiya because of the storyline, the clothes of the knights and also the courage and the determination displayed by the main character in both mangas
