I would guess that Constantin was the last.

Julian is generally recognised as the last pagan Roman Emperor. The last 2 before him would arguably be Constantine I and one of his co-emperors. Since Constantine converted to Christianity during his lifetime and wasn't baptised until very late in life, you could argue that he was a pagan Emperor for at least part of his rule

Julian the Apostate was the last pagan. But there were eleven emperors before him who seem to have been Christian. And Constantine was Christian during much of his reign and died one, so he doesn't count, so that would bring us back to the emperor before Constantine, one Maxentius, defeated by Constantine in some kind of spat, and the one before him, Maximian, who lasted about a year. The whole latter Roman Empire was a mess
