The physics and basic theory of the CRT (picture tube) have not changed at all. The electronics and such have been dramatically improved - but the electrons smashing into the phosphor and emitting light is the same.
However, the newer Plasma, LCD and DLP sets are completely different.

I would say the technology, not physics has changed. The physics is all the same.

Electronics changed from vacuum tubes to VLSI.

Displays changed from CRTs to plasma displays.

Transmission terrestrial to cable to satellite

and so on.

Some of the big changes would be the addtion of color, higher resolution, solid state electronics instead of tubes, liquid crystal screens and of course digital signal processing.
