Do you know the bible story of Adam and Eve? Well, to eat the apple was a sinful act, and Adam was told specifically not to eat it. His wife took teh apple and bit into it, then showed it to him and told him to do likewise. It didn't take a lot to tempt him into eating it, because it looked so delicious, and the hunger for knowlege was consuming him. So, long story short, to be the apple of someone's eye is to be the temptation to him/her becaus ethey want you so much. It is also used in fondness by parents or friends, and that meaning differs slightly, meaning that you are very precious in their life.

The answer that Tendo gave is a good one.Another way of looking at it is,just as we say 'An apple a day keep's the doctor away', 'so apple' is said to keep us good and healthy, so 'you are good for him'
