If she likes flowers, maybe get her a flowering plant that she can enjoy for a few years, maybe forever if she takes care of it. Something like a Christmas Cactus, or an Amaryllis, or maybe Tulips. Or if she likes to cook, some assorted herbs in a nice pot. Any nursery, Walmart, or Home Depot will have everything you need.
If you still want to go the flowers route, don't buy any mass market produced bouqet from the grocery store. Buy a few individual flowers and create something unique. Mix all red roses with some evergreens, or make an all white arrangement. Put it in a pretty vase that she can keep, and hopefully you will continue to buy her fresh flowers for.
