Peanut butter and dill pickle, when I'm in the mood for something simple.
When I want to put a little more effort into it, I make "grownup grilled cheese." I use light rye bread, prosciutto (cured Italian ham) and Jarlsberg cheese (a good swiss-style cheese). Throw a pat of butter on a griddle, and grill on both sides.
