Very simple. Its the transformation straight from solid to gas, skipping the liquid stage. Most common example it dry ice placed in water. The fog you see is mostly carbon dioxide gas.

Water can sublime; when the weather is really cold (well below freezing) but low humidity for several days straight, ice will slowly dissapear even though it never melts. Also when you open the boxes of certian kinds of frozen foods, (like frozen vegitables, pizza, etc) you will find ice crystals clinging to the inside of the box. This ice was not there when it left the factory, it sublimed out of the food on standing for weeks in the freezer. Also, moth balls (naphthalene) and the cakes of stuff they put in the urinals (para dichlorobenzine) both sublime (the chunks gradually get smaller with time even though never melted). In addition, both camphor and menthol will also sublime. In fact many organic solids will sublime; you will probably see bottles on the shelf in the chem lab that have very pure, clear, well-formed crystals that have deposited on the sides (above the level of the rest of the solid chemical). This is usually from sublimation.

Sublimation is when a solid goes directly from a solid to a gas.
True examples are Iodine, Carbons Dioxide (dry ice), and Carbon.
The affect can be seen when it is cold (very) and snow becomes vapor with out melting. You can see this in the freezer when you leave ice cubes in the frig too long.
Just a note: CO2 gas is a colorless, odor less gas. The stuff you see when dry ice is put in water is not CO2 but water in the air condensing from the cold CO2.

Snow and water ice are constantly sublimating. Solid Iodine, also, Zinc and Cadmium (under low pressure), and Naphthalene (moth-balls) are other examples.
