The castles were built during many peroid in history. They were not always called castles. Castle comes from the Latin word castellum meaning "fortress".

Cathedrals were build later, during the early years of Christianity, one of the first was a basilica( cathedral) dedicated to St. Etienne constructed around 528 by Childebert. later a more roman style of basillica was built with the pillars standing until 1163 when the work started on one of the most famous cathedrals Notre Dame was completed in 1250

thats like asking-what was built first, malls or housing developments?they were built at the same time-as towns sprung up,they had all the usual elements of their time-castles,peasant huts, markets, gaols, gallows, cathedrals.they werent a seperate enterprise-they evolved naturally and more or less, simultaneously.
