In my experience as a librarian, books about witchcraft and the occult seem to walk away with some frequency.

Books on the occult and homosexuality were stolen more often than checked out at our library. The books that people LOVED to steal were cookbooks. More than 50 were gone when I persuaded the librarian to let me do an inventory.

As for Bibles missing in hotel rooms, those get taken by individuals who need one at that moment in their life. People don't just take Bibles for a lark, but because they have troubles and at that moment they turned to God. The Gideon Society, the one who places the Bibles free of charge in the hotel rooms, understands this and replaces them periodically.
