Fist of Fury - Bruce Lee.
I still remember him playing kato in few episodes of batman - why back. I didn't know who he was at the time, but his fighting skills were awesome. I don't think anyone ever saw moves like that.
One of the things that always seperated Bruce Lee from other martial artists was that there were no theatrics in his moves. Everything he did had a purpose - every move, every kick, every flip - was meant as a counter or strike toward his opponent.
No other martial artist I've seen can compare to the realism Bruce Lee brought to the screen.

The best fighter is Bruce Lee hands down, but his movies are very old school, some of the fight are unraveled, but still in the cinema world thay have been left behind. As for the best stunt-man that's Jackie Chan, when he first came out he was called the new Bruce Lee, but his movies didn't have a very good story, but the stunts were hands down the best ever. In Jet Li's his been the fighter to best combine Martial art with movies( I don't know if you know or not but real Martial arts is very different in the real world, it doesn't look to amazing, but it is very affective) Some of his movie have been said to have the best fight ever like,Fist of Legend, and he has more popular movie than Jackie or Bruce, once again because of the choreography on the fight. So they are the best at what they've done.

Bruce Lee. Jackie Chan is all about theatrics and choreography. Jet Li is good, but doesn't really do anything all that special. Bruce Lee changed martial arts by developing his own technique called "Jeet Kune Do," which means "The Way of the Intercepting Fist." Basically, it entails intercepting and then attacking rather than blocking and then attacking, which requires two separate moves. Jeet Kune Do is one fluid move. It allowed him to be faster than any martial artist before, and probably since.
