I actually really liked Far and Away. I am a history freak and love historical fiction and thought the story line along with the acting was very good, and as a woman, yes I liked the romance of it...
Runner Up would be Moulin Rouge very artsy, and man can she sing! I had no idea
Others on my list that people would probably shoot me for:
-Eyes Wide Shut (I think it was a very misunderstood movie, maybe if people have read stuff like Davinci Code the understand a little more about secrect societies and their rituals now)
-Birth is another, yes there were some disturbing scenes, however, her acting was great and the actual movie concept was very intreging (I think people aren't ready for some things yet)
Honorable mention would be Malice, what a great thriller! A close second on the thriller list would be The Others

She's not one of my fave actresses, but she's had some really good parts. I'd say some of her best are:
Cold Mountain
Far and Away
The Others
The Human Stain
I do like "Pratical Magic" with Sandra Bullack too. The others listed are more dramatic than this one though.

Moulin Rouge is my favorite, the fact that she did the singing is just great.
I also really liked The Others, Eyes Wide Shut.
Another forgotten one is Malice with Bill Pullman and Alec Baldwin, it's twisty- she's amazing in that.

The Others. I can't take her seriously in any other movie, especially with those eyebrows that give her a constant angry expression on her face.
