Depending of the year and model. On old 3 series (1982-1990), the S (for Sport) meant a 24 valve engine instead of 12.
For newer models, it means sports chassis (harder coils, lower suspension, 16 or 17 alloy wheels). In some countries, the gearbox ratios can also be different.

The 325is has more factory installed options. I think the s stands for Special Edition.
