When their sleep time approaches, why do birds keep on flying and moving from one place to another, when they can just stick to one place and sleep there? Do they need to look for something before falling asleep?

So what are they looking for when they move? A safe spot? Or being in a place crowded by birds of their same kind?

Depends on the bird. Some settle down for the night alone, or on a nest. I assume you're talking about big flocks of birds like blackbirds and crows. Some of them look for a spot to roost together because of safety in numbers. They may fly all over at dusk to round up everybody and then fly to whereever they decide is a safe spot to spend the night.
