I'm just wondering if the Ingalls family really did adopt Albert, Cassandra, and James. Or is there a different story behind it that the TV show changed?

No, the Ingalls family did not adopt Albert, Cassandra, or James. They were added character for the TV show. I know because I read the whole set of the "Little House onthe Prairie" books which is based on a true story.

No they were not. As far as the tv show goes, I read an article that said children were added to keep the show's popularity. It seems in most shows with children, younger audiences lose interest as the characters grow up. So younger characters are added.

No, those characters were only part of the tv show.
