I want to catch them without hurting or scaring them, but currently I catch them by placing treats in a box, and hope they jump in. Unfortunately, they're not cooperating, so are there any other methods?

I'm doing this since the weather is getting a little chilly (30-40 degrees), so they can be warm inside. But if worst comes to worst, can I leave them outside?

Try renting a humane trap from a shelter. Winter will be difficult for htem. i don't see domestic rabbits surviving. http://www.rabbit.org

Rabbits are most comfortable at ambient temperatures of 40 degrees F - 85 degrees F, but can tolerate colder temperatures if acclimatized and if provided an enclosed shelter.

yes, you can leave them outside if you prepare an area for them to have shelter. If they are so wild as to not be controlled then you don't want them in the house anyway. Rabbits are wild animals that are often domesticated and occasionally are kept in homes but really not too successfully.

I usually offer my rabbit a treat, then grab him! He has become used to this now and quite often just comes over to me anyway. He's more frightened of my partner though, so he throws a small towel over him, this makes him stop, then my partner can pick him up without startling him too much

At this point, it is too late to bring them in, the temperature change will be too drastic. It would be better to provide them with a hutch or other shelter outdoors filled with straw for insulation.

IF THEY HAVE PROPER SHELTER AND HAVE ALWAYS LIVED OUT SIDE THEN YES THEY CAN STAY OUT BUT IF THEY ARE INSIDE PETS NO THEN THEY CAN'T STAY OUT TRY NOT FEEDING THEM FOR A DAY THEN OPEN THE DOOR TO YOUR HOUSE AND SET THE FOOD INSIDE AND THEY MAY COME IN ON THEIR OWN
