There is, as mentioned the antagonists view, such as the wolf's. But how about someone in the crowd when the emperror wore no clothes? What was everyone thinking when the little red hen was asking for help. What did the oak tree think of chicken little? What was the rest of the world doing when Sleeping Beauty was taking a nap, and how about those evil stepsisters? If you go back to the Grimm, someone was always going to die and get carried off by an eagle or falling into molten lead (for a really short story).

How about the story of Rapunzel from the old woman (witch's) point of view? Or how about Ruplestilskin from his point of view? Or the wolf's view in Little Red Riding Hood? Or the giant's point of view in Jack and the Beanstalk? This sound like a fun assignment! Have fun with this.

A quick story would be the story of the tortise and the hare from the point of view of the tortise. Maybe he didn't know the hare was racing, he was just on his way to a friend's house. You could tell it post race so it's all a flashback.

Rapunzel or Hansel & Gretel from the witch's point of view? You might add a twist, like maybe making it the same witch or something. Good luck.

I think Jack & the Beanstalk - told through the viewpoint of the Giant might be interesting. Basically - this little person came into his house and stole him blind and when he gave chase - he murdered him. Sounds sad that way doesn't it?!?!

tell jack and the beanstalk from the giant's POV, very easy one. make him out to be the good guy and make jack some jackass kid who was trying to rob him and take his girlfriend or whatever. automatic A, trust me. im a creative writing major.
