I think you are talking about the name, right?
In that case, I believe the name of the country came first, and the bird was named after the country. One of my linguist colleagues told me that the name for that bird in many languages is the name of a country, but different ones, and always a country that seems exotic to the people who are talking about the bird. So some people name the bird after Turkey, some after India, and maybe some others.

Turkey the country came after WWI. The word "turkey" is modern english so i would assume at least 500 years. So the word and the bird came first.
