I had a yummy relish at a Thanksgiving luncheon last Sunday that would be excellent for Christmas as well. I'm really curious as to how exactly it is made. From what I could tell, it was finely chopped cranberries and small bits of orange peel. Would it be necessary to add sugar or something else?

I make cranberry relish every Thanksgiving and I agree with you...totally yummy!

1 1/2 pounds fresh cranberries
1 lime
1 tangerine
3/4 cup packed light brown sugar
3/4 cup granulated sugar
3 tablespoons orange liqueur (I just use a nip of Grand Marnier)
scant pinch of ground cloves

Place the cranberries in a food processor and process just until the berries are coarsely chopped. Transfer to mixing bowl.

Cut the lime and tangerine (peel and all) in 1/2 inch pieces. Remove any tangerine seeds and place the fruit in the food processor. Process until finely chopped. Add to cranberries.

Add the sugars, orange liqueur and cloves and stir well to combine. Taste for sweetness and adjust if it seems too tart. Let the flavors mellow overnight in the refrigerator.

The relish will keep for several weeks. Makes about 6 cups.
