in the microwave so the cats don't get it, although they are learning how to open it (like they did the breadbox before it)... I may have to find a better place

I presume you mean edible bread? Out on the table, tied snugly.
Not in the refrigerator though. Cause' it will turn stale at 5 times the rate, in the refrigerator. A one day old loaf in the refrigerator, is like a 5 day old loaf on the table.
If I freeze it, when I take it out I untie and open it, to let it dry so it won't turn moldy from all that moisture which gathers in the bag.
My bread is 100 percent whole wheat, but it has preservatives. At over 2 dollars a loaf, I am not gonna pay for it twice and eat it once, know what I mean?

I keep mine in the fridge so it lasts longer. One loaf of bread can last almost 2 weeks, and i dont want it to go bad... but prior to living on my own, my family keeps our bread in a bread box.. we're a family of 6, so no need to worry about bread going bad
