Magic Kingdom - Space Mountain, Splash Mountain, Pirates of the Caribbean, Haunted Mansion, Disney's Philharmagic.
EPCOT - Soarin', Test Track, & The Fireworks show in world showcase lagoon at 9pm every night.
MGM Studios - Rockin' Roller Coaster & Twilight Zone tower of Terror
Animal Kingdom - Expedition Everest, Dinosaur, & The Safari.

I like Test Track at EPCOT a lot, too. 65 MPH doesn't seem fast, but since it's a ride and not you driving your own car it feels a lot faster. It's a fantastic ride. Also at EPCOT, the most popular attraction there is Soarin', and you have to ride that. But Expedition Everest, the newest ride at Disney's Animal Kingdom is incredible. The Imagineers did an awesome job. It's a very fun roller coster that goes forwards and backwards, and you get to see the Yeti! Also, from the peak of the mountain you can see all the other theme park icons, like the Geosphere at EPCOT and Cinderella Castle at the Magic Kingdom. You get a great view of just how large the Walt Disney World property is. The Haunted Mansion at the Magic Kingdom is a must. My favorite ride at the Disney Studios would have to be the Rock 'n' Roller Coaster Starring Aerosmith.
P.S. Don't miss the fireworks shows at night! They're the most spectacular in the world!

Get there when the park is open. Go directly to Pirates of the Carribean. Skip everything in between that and the main gate. You might be able to go through Pirates twice before the crowd makes the line long.
I would spend a couple of more hours or so. Then go back to the hotel, relax in the pool, and hit it again in the afternoon.

It all depends on what you like. The great thing about WDW is the different parks that offer something for just about anyone.
If you like the slower more traditional WDW rides they are there, the same as if you like high impact rides you have them there too. And the nice thing is every park has this blend.
I could start naming all the parks and rides but other folks have already done that. What you could do is go on line, or call their toll free 1-800 # and get there vacation planning kit. It really goes into detail not only about the rides but the whole WDW experience.

At Epcot I really like Test Track. It's a cool ride. The cars go 65 mph.
