Hi, First of all, I strongly recommend u book through a travel agency. You will get better rates and they will take care of all the minor details. You are travelling with a baby and by these details are important and will save u a lot of time and effort. These details include transportation to and from Cairo Airport, guided tours etc.
Second, Cairo is a huge city. The Pyramids is really far from the town center and far from the airport. It is in an area called Haram in Giza. There are a few great hotels there, but that also means u r far away from the other attractions.
My recommendation is to book in either the Four Seasons in Garden City or Grand Hyatt also in Garden City. Very central location, over looking the Nile. It is not too far from Pyramids and Sphinx and also near the Cairo museum in Tahrir Square.
Cairo is probably the biggest and most congested city u will ever see. It is surely worth the visit and visiting the monuments is beyond imagination. So, again, I stress the need for a booking through a tour operator. It will save u the hassle of finding cabs etc and believe me Cairo is not the easiest city in the world.
One last piece of advice. If you want to experience the real egypt and its civilisation, take a nile cruise between Luxor & Aswan. It is beyond amazing.
I am adding a few sites to help u with the hotels if u decide to book your self.
Enjoy

Yoiu should have made reservatios a long time ago. The best for 1st time travelers to be near tourist attractions with a young family with plenty of english-speakers is the American Hotel in downtown Cairo and nearby it, the Hilton. They have both variable price ranges for the budget-conscious tourist. The restaurants located within are wonderful and have local, American and foreign cuisine. They even have mini-malls on the first floor of the hotels! Their people will secure taxis and other means of transport for your shopping and touring pleasure without you having the hassle. I suggest you contact a travel agent immediately for a reputable pension if you desire cheaper fare as well as make reservations at either the larger ones. Egypt celebrates Christmas, too. You'll be very close to the Khan Ghaluli (ancient shopping alley that winds snakelike for aboutr 2 miles between the old harem buildings), the American Embassy, Old Cairo, the Nile River Cruises, Egyptian Museum, and the new Shopping Row. Have fun!

I like the Meridian at the Pyramids it is at the base of the Pyramids. You open your curtains and there they are! Mena House is also there closer to the pyramids and is absolutely beautiful. If you wanted to be on the Nile they have the Nile Hilton. Ih ave stayed at all of these and would recommend them all. I have pasted a link to all the hotels in Cairo and they tell you if they are in Downtown, RIver, etc..... Most hotels will have guides if you wanted one or they could tell you where to go if you dont know exactly what you want to do. Enjoy yourself and please see the Pyramids light show!!!!
