In folklore, as well as some movies like "Love At First Bite" with George Hamilton (older film, came out in the 1970's), it took three bites, one per night, and on the third night, you became a lesser vampire to the one that created you.
In many films, like the film "Horror of Dracula" that featured Christopher Lee, you became a vampire not from the bite, but from being nearly drained to death and then drinking blood from the other vampire, which transmitted the condition to you like a virus. After a time period of adjustment, which might include a period of unlife, you would rise as a full, thirsting vampire.
Vladimir Tepesh Dracule "the Impaler", the man that Bram Stoker based his character Dracula on, hero to many in Romania to this day, was said to have been cursed into his condition by the Church, doomed to roam the earth as a lost soul. So, there are many ways to become one of the Nosferatu, just as there are many species of animals.
When I was younger, I wanted to be one, but I discovered that what I really wanted was what I thought they had by their very nature: Power over others. I get that now by writing romance stories about them and getting money from the sales of my novels. There's nothing like doing something you love, making a big profit, and using that cash to buy all the things you want.

Ok, so basically, mostly writers/authors determine what is status quo for vampires, and most come up with their own special versions. Notice I say most for both statements. You could get hundreds of versions. However, I'm sure that doesnt interest you.
My personal version: a vampire bites a human, takes any amount of blood they want as long as they dont suck the person dry and kill them, and then they give the human some of their blood. If the vampire's own blood is not given, then that human just got one hell of a hickey and should live, unless to much blood was taken and they dont get to a hospital soon enough. And, technically, the vampire wouldnt even have to bite the person. The human could just have a cut and the vampire might drink the blood that way, and then give their own blood in return.

It depends... from who? That's right. According to legend, if you're bit by a vampire nothing happens. The vampire will suck your blood except for the very last drop before you die. Drinking blood from a dead person will make the vampire sick, it could even kill them. The way to become a vampire is to bite the vampire. Many are usually forced into doing it. The vampire makes you suck his or her blood. That's how you become infected. By the next night you'll be a vampire.

This varies from around the world, but one of the most popular versions is that you can only become a vampire by drinking the blood of a vampire as you near death yourself. Just being bitten and surviving would make you subjective to the Will of the vampire that bit you, keeping you at the threshold of life and death, but not truly undead.

No matter what the legends say, there is no such thing as being a vampire. They got that from Wolves. Wolves eat raw meat, and if someone is in the woods bleeding, the wolves can smell it and they will be more prone to attack.
Vampirism is a 'state of mind' which depicts evil. Best to stay away from folk-lore. It's full of junk.
