I'm trying to find a really nice cutting board for a friend, I see all kinds of different woods - does it matter?

If wood, use hard rock maple. it has a very close grain and doesn't tend to absorb.

Plastic boards are nice because you can stick 'em in the dishwasher and sanitize them. Don't do that with a wood board!

Bamboo is a very good type of cutting board. They are usually thicker. Make sure you rub the board with oil to prevent cracking and don't put it in the dishwasher; wash by hand.

Empress, to ans your Q, kiln-dried Oak is the best and will hold up the longest...does not splinter as much as others.
However, if you plan to cut a lot of bloody beef or fish on it, get plastic cutting boards.
You can have both, but use the blood items on plastic. They are NSF approved.
You can find professional ones at your local 'restaurant supply' store for restaurants only.

maple is supposed to have something in it that retards bacteria growth. Other woods may have it, but maple must have more of it. Be sure it is northern or rock maple and not the southern or soft maple variety.

Acrylic cutting boards may be more sanitary, of course how much more sanitary is debatable. But they are harder on the sharp edges of knives... its your call!!

skip the wood ones they hold bacterial...go for a set of three glass or plastic ones ...each for a specific use such as one for meats..one for breads..one for veggies.
wood ones can not be effectively cleaned. You don't want your friend getting e coli or samanella

well, you shouldnt really use wood anymore, new studies show that it isnt that sanitary, use some kind of fake wood acryillic stuff. if you want wood, then some kind of hardwood of course, pick the one that you like the looks of best and is in your pricerange.

Oak with black cherry for contrast. Don't actually use it though, wood holds bacteria.

i like bamboo ones, as far as being sanitary, use common sense, wash thouroughly in hot soapy water, let dry really well.
