Because they ARE Persians which is a culture in itself. If you are a Catholic from Utah, you wouldn't want to be known as a Mormon.

Iranians are Persians and are a different ethnic group from Arabs. Further, the Arabic language is a Semitic language while Persian (Farsi) linguistically belongs to the Indo-European family of languages.

Persians are a distinctly separate ethnicity. So are Turks.
Iraq is basically the farthest east you'll find an Arab majority in population.

The Persians are descendents of the Aryan (Indo-Iranian) tribes. Arabs are Semitic people originally from the Arabian peninsula.

It's because the Persians were the people who settled Perisa(now Iran). Also they speak Persian in Iran as well.

Because that's what they consider themselves to be. They see themselves as a different ethnicity from other Arabs. I would assume they have a different language, culture and religion. Hint: Not all Arabs are Muslim.
