I'm pretty sure there was a Bond movie where Bond is going by a fake name, something like "Doyle," and he comes across a man tied to the floor. The man is suffocated with a clear plastic bag over his head, but he's written the name "Doyle" (or whatever name Bond was using) with his finger on the carpet.

I can't recall for sure, but I'm thinking it's a 007 movie. Can you tell me which one?

The movie is "Charade" with Cary Grant

I can tell you with 100% accuracy that it's not "You Only Live Twice." Seen that movie many times and that's not it. Unfortunately, I'm drawing a blank as to which Bond movie it could have been. I'm thinking it might be Sean Connery's return to playing 007 in "Never Say Never Again."

I would say "You Only Live Twice" because I know Bond was operating under a fake name for General Exports.
