you have two types of boats....and I don't mean power or sail...you have displacement or planing.

A displacement hull stays in the water and the engines or sails push it along......for various physics reasons the maximum speed is: the square root of the length of the boat at the water line times 1.25. This covers most motor boats, sailboats, all merchant ships......

A planing hull actually rises up out of the water and skips along the top....Hobie cats, high speed power boats like the cross Channel ferries, Donzi or Cigarette boats........and the speed is limited to how big the engines or the sail area is........

Two contrasting examples are the boats used to sail for the America's Cup and in the Volvo Around the World Race; both are about the same length and sail area....the Americas Cup boats are displacement and can do about 12 knots; the Volvo boats plane and can do 20 downwind!

So the answer to how fast yachts go is: what boat we talkin about? Anywhere from 5 to 70 knots!

Are you referring to sail yachts or power yachts? We saw one at Marthas Vineyard that was built for a James Bond movie(Moonraker) that went 70knots. The builder was paid more for every knot over 60.
Sail yachts cruise at 6 to 8 depending on their length(under power) and a little faster if the wind is blowing steadily.

7 to 11 knots they are large and with twin 500hp cats under the hood on a 50 foot vessel your looking at around 15 knots but on average like ii said 7 to 11

Hydroptere seems extra like a yacht than Vestas Sailrocket, besides. the subsequent version (Maxi) is meant to manage to circumnavigation. yet i wager you meant something somewhat extra comfortable.
