If you are looking for the worst of the west in India go to Goa (the busiest places are over run by tourists), but if you are looking for a real taste of this beautiful country you absolutely must go to Alleppey and go on a 24 hour backwater trip on a rice boat. You can barter for the cost and should run you about £40 or so for the whole thing. I would suggest a few days in Varkala to chill out next to the sea on the beautiful cliff tops and use one of the organised tours from there to take you to Alleppey, just remember to haggle! Grab a few beers before you get on your rice boat as they arent allowed to buy them for you and you basically glide through the backwaters with your own chef and a few men to man the boat. Its pretty amazing and if you are in south india then this is not to be missed.

Also, Mysore and Ooty are close.

Salem's also a neat place.
