Gordon Lightfoot did a song a long time ago called "The Last Time I Saw Her". It is musically and lyrically a masterpiece. Unfortunately, it is quite sad.
There are too many more that are favorites of mine by artists such as Shai, Linda Ronstadt, Kenny Rankin, Dan Fogelberg, Mary Chapin-Carpenter, Diana Krall, Cheryl Wheeler, Judy Collins, Joni Mitchell, Beth Nielsen-Chapman, Lionel Richie, Laura Nyro, Noel Paul Stookey, Noel Coward, George and Ira Gershwin, Jerome Kern, Cole Porter, Rod Stewart, Jim Morrison, Chad & Jeremy, the Beach Boys, Elton John and our course The Beatles. This is only a partial list.

"The Way You Look Tonight". It's the most romantic song in the world. Julia Roberts and Rupert Evertt danced to it at the end of "My Best Friends Wedding". Tony Bennett sang the version in the movie, but I prefer Michael Buble's rendition.

"Only Hope" by Mandi Moore.....because it brings back a lot of memories. I listened to it a lot in the 7th grade, it reminds of being that age again, how much I've changed and how much my life has changed. I lost a lot in the 7th grade, it felt like everyone was leaving me behind, but there was one person I just couldn't let go of. And this song reminds me of how much fun we had together. Funny how memories can be burned into songs like that. But the more you listen to them, the more they tend to fade away.

Leather and Lace by Stevie Nicks and Don Henley - I like it because it's about two "opposites" who know they are meant to be together...the melody, I think, is also beautiful.
