I did a How to speech back in my first college degree and showed them how to learn how to play piano in 20 minutes! I took them down to the music room and we did an easy piano lesson in that time.
Another option, show how to put a Powerpoint presentation together.
How about explaining how to check for virus on a computer,
how to search for something really useful on the internet
How to create a myspace account
How to use Noodletools (a great website to show how to do proper paper citations)
How to change a tire
How to check the oil in the car to ensure it's still usable
How to do a simple car maintenance project
These are the first things that I could come up with.

What school do you go to, cuz i did the exact same thing at mine, Maine East High School in Illinois.
I did how to swim the butterfly since im on the swim team. Do like a sport you like no matter how weird. The weirder the better.

I would get a hot plate and show the students how to cook. If you can get a single gas burner it would be better. do something simple like stir fry. get all your veggies cut and your meat par cooked. then in class just throw it together and heat it for a few mins.

If it were me, I would pick a subject I am pretty hot on and feel that I know a lot about it---and go with it. For instance, if you are really rabid on the death penalty, do that one. Or, if you are really psyched up about legalizing drugs, to that one. Get my drift. Pick something you are really hyped up on.

Go to an electronic's store and buy a New gadget and explain
what its for, how it works and how it can benefit anyone
who buys it. Gives you an excuse to buy something electronic.
