Bloodhound is only a breed of dog whereas Dalmatian is in reference to a geographic area where the breed apparently comes from i.e. Dalmatia, German shepherd is another example of this i.e. German-Germany. Cool question.

no because it is not a proper noun - ie name of town or person, its just a type of animal.
