very large open areas with 2 air conditioner units, but we really only want & need to run 1 at a time for cost effectiveness but because we cannot close off one of the areas, the air conditioners cannot work effectively - we don't own the home - we are renting the property

You could put up plastic and curtains. Plastic will hold the air in and the curtains would make the doorway look pleasing to the eye. you can use sheets for the curtain if it is a large doorway and they are long enough with the hem and rod pocket allready in them.
That's the least invasive way and the safest way. You could buy some building insulation, the blue stuff that is rigid and put it in the doorway and put curtains up to hide it. good luck.

Cheap accordion doors (vinyl) but you will have to use small screws at the top and sides, heavy drapes or a blanket tacked with staples is especially nice, and there's everyone's favorite, beautiful plastic sheeting.

all are good ideas. i use a blanket that is nailed at the top and bottom of one side then another nail int the other side of the wall across from the doorway. then i hook the blanket to the other nail. this way i can take the blanket down as i need to or leave it up.
