In years past I have waited until a few days before Christmas to start mine then Im rushed and exhausted for Christmas. And this year I will have to mail a few off and want them to get there on time..I know alot will store well in the fridge...But when is a safe time to start so the candy will not be too stale by Christmas.

We make cookies and candy every year. I start at the first of the month or right after Thanksgiving. Chocolate keeps for a long time so no worries there, same with hard tac candies. Cookies you can freeze. Makes life so much easier to have things done so you can enjoy the days right before Christmas. I have frozen cookies, pies and cakes with no problems.

I have made candy in the past and I have a friend that is a x-mas candy making fiend and she has started making it as early as two weeks before hand because of all the people that love her candy. I don't make some of the items that she does and I do start two or three days before x-mas so that I will have time to do that and work too without wearing myself out.

Depends on what you make. If you make baked goods like cookies and some cakes (as long as they don't have a custard or some sort of wet filling), you can make the batter and roll the cookies into whatever shape they are going to be, then freeze them in a single layer on a cookie sheet, then once they are frozen they can all be put in a ziplock bag (make sure to double bag), then pull them out and bake them a few days before, so you got one step done. Ditto with cakes, only you can freeze them after they are baked and cooled. With candies, depends on what they are. I'm making caramels for everyone this year, so I can make them at least a month ahead of time then freeze them. Some stuff like fruitcake actuallly gets better with age. Unless you temper chocolate, you really can't make those ahead of time, or they'll turn grey, unless you use a candy coating (bark). Most candy can keep as long as you store it in a cool place. Chocolate covered cherries need to be made at least 3 weeks ahead of time to let the fondant liquefy. Home made marshmallows can be made several weeks ahead as well. Easy to make!

You can always send the candies overnight through the mail process if you are worried........If you do this method then I would give it about 3 days to a week before Christmas
