You could do a solar powered microwave. You should be able to find the steps to it online somewhere, its pretty easy to make. You can even make hot dogs for your class (extra credit). You could hypothesize that it takes less energy to cook it solarly than it would to cook it in a microwave.

dont really know what they teach in 8th grade thesedays... maybe you can make an electromagnet... and show how more power will increase its power... etc etc...
