The thermostat was replaced about 2 weeks ago and since then my car is not losing the coolant anymore but the temp gauge will move all the way to hot and if I continue to drive within a couple of miles the needle goes back to normal, also my dash lights and headlights start to go dim but then will brighten up again.

Yes you need a thermostat it happened on my old Grand Prix.
My car did the same thing yours is doing. Change it quick because if you drive your car around like this than your oil will start to break down and this will damage your engine.

are you sure you got the right thermostat for your car? they usually make a couple different temperature ones for every car, depending on the options you have, like AC or how big the engine is, etc, you may need to get one with a lower temp on it! as for the headlight thing no idea, your car may be starting to die or your batt. may be bad

Sounds like the thermostat is waiting to long to open. It could be a defective thermostat, or the wrong one for your car. I would change the thermostat. PS: Don't forget a new gasket.

if it is getting hot at very low speed and stopped then i would check to see that the fan is working

when the vehicle is moving fast enough the air going through the front of the car is enough to cool the car but it needs the fan for very slow speeds or it will get hot then

Coolant level is low.
