There actually haven't been too many movies depicting Bipolar disorder, especially nothing extremely recent. Ed Wood comes to mind, and also Good Morning, Vietnam. I believe Sophie's Choice would also fall in this category, though it's been a long time since I saw that one. I hope some of these appeal to you!
And also, somebody mentioned Sybil. I wouldn't classify Sybil as a movie dealing with Bipolar. Sybil had Dissociative Identity Disorder, which is completely and totally seperate from Bipolar.
