Parrots become inebriated from eating too many fermented berries.

The skunk is a clumsy animal. If you have ever seen a skunk wander from one garbage can to another, you might think it was inebriated or drunk. It could had been the source of idioms "stinking drunk" and "stinko" ("stinking" has been used in English to express disgust since the 15th century). No creature alive is stinkier than a skunk. Because "skunk" rhymes with "drunk," the two words are a natural match.

As for a newts, it could come from their walking motion . The side to side action is like a drunk lurching down the street. This could had been the source of describing newts as drunk.☺

I have never heard anyone say as drunk as a parrot or a newt, but people say "drunk as a skunk" because it rhymes.

You have never seen them drunk because you have most likely led a very sheltered life.
Get out of the city and move to the forests and observe nature at it's best.
I have observed all types of wildlife get inebriated consuming fermented holly berries, etc.
