i have heard it is 6 months. how does veal compare to full-grown market cattle? what is the reason people raise veal? we used to have a veal farm around our area but it went broke and the guy finally gained enough money back that he might start it again. but he is really hard to talk to he never really likes talking to people, etc.

is it possible to raise an Angus calf and market it at veal age? or does the breed specifically have to be dairy steers/bulls?

what do you start and grow your veal on? (like a starter or can they go straight to the grower) is it possible to have grass-fed veal?

Ask the guy to teach you the business.
Be honest with him.
Your interest seems to be genuine.
He might be flattered.
He gets some help and you get a future.
Sounds like a good deal to me.
Most people are wusses and can not comprehend what it takes to put meat on the table.
Especially baby animals.
This is why he avoids people, I guess.
To my knowledge:
Males are chosen for slaughter.
Only need one good pump for a herd.
Now you can buy sperm and you don't even need a bull for this any more.
Anyway.
It is veal as long it has not started to eat vegetation, which darkens the meat.
Calfs go to market 4-6 weeks after they are born. To gain weight and time they might keep them longer on baby formula.
What does it taste like ?
I would say close to chicken or turkey.
The flavor in beef does come from the grain and the accumulated fat.

These calves are fed a milk based diet for their first 6 to 8 weeks after which a corn and protein supplement are gradually introduced to their diet.
I am unsure of the taste behind veal, as it's not my type of food.
