Does anyone know of a scientific site, study article or whatever that shows that germs can survive on a cake backed at about 160° Celcius?

How do you mean "survive"? Still alive and able to reproduce...? How long do you want this cake to be sterile? Do you intend to frost this cake at 160 degrees C? I think you need to rethink your question...

I am pretty sure any germs hanging around your house will not survive 160* Celsius.

Cooking kills some, but not all, of the bacteria. Also remember, the food doesn't necessarily get as hot as the oven temperature.

Autoclaves are used to sterilize equipment at temperatures lower than your 160 degree oven, but they use a combination of pressurized steam and temperature.
