There were others including Galileo that Einstein used to help explain how his own theory was developed. These were used by others to try and explain the final results of the famous work by Michelson and Morley which proved that there was no ether. Fitzgerald from Ireland was his greatest contributor as well as Lorentz to the ultimate development of his own theory.

If you are asking about just the special and general theories of relativity, then it's just Einstein's. However, lots of work has been done by him and many others since to try to unify relativity with the other physical theories, notably quantum physics. If you count those, the number gets quite large. Superstring theory and quantum (loop) gravity are the main categories, each with many competing partial theories.

The onlyl theories of relativity in physics( or any other subject as far as I know) are Einsteins theories of special and general relativity.
