Well, some do and some probably do not. It is just like asking somebody if they remember being born or being a baby. You really can't remember. But, a lot of people can remember childhood and being a toddler.
They probably do remember muching leaves and turning into a butterfly, but no one really knows for sure, right?
I'm sure they wouldn't think caterpillars are a different species because they used to be caterpillars. That's like someone saying,"I think babies are a different species then humans." You know that you used to be a baby. Even if you only remember bits and pieces.
I hope this has helped you!

Their brains are too under-developed to have past recollections and yes, they live by instinct and instinct alone. But, it would be great to come across a different specimen a slight genetic mutation that has a brain.
Why butterflies - even highly developed animal species except Apes and dolphins don't remember their past. From what I understand in Biology, human beings are equipped with a particular section in our brains that cultivate recollections from the past. I draw reference to those people who have lost memories because of an accident as in the Movies. Well, what really happened there must have been an injury into that section of the brain.
For most animals, that section of the brain is non-existent.
