For safety they might need to lock the door. If the power goes out, the store might close. Also, many of the stores were built a long time ago when they weren't open 24 hours. The name is 7-11 and that comes from the fact that they used to be open from 7 AM until 11 PM.

There are several possible reasons. The first is in case of a robbery they lock the doors so the crime scene isn't disturbed. Then there can be the case of an emergency where the clerk may have a medical emergency or some other emergency and has to lock the door. But, the most simple of all answers is to protect the money in the cash register when the clerk must use the restroom.

Where I live (Sydney Australia) alot of seven-elevens, gas stations and 24 hour stores lock their doors at night and have a night-pay window where you pay for whatever you buy and then they pass it through the window.

The window is no ordinary window the customer slides their cash/card through this sort of mini-tunnel thing and then the worker slides the goods back through the mini-tunnel thing, which can only be opened one side at a time.

The limited number of stores that dont have this window lock their doors and the worker will only open the doors if they think the customer is not a threat.

This is done as Australia has a robbery rate which is tripple the U.S. robbery rate and Sydney would be even higher (possibly ten times the average US rate).
