Prune them on the day you last pick some fruit!
Here is a good trick for both raspberries and blackberries--cut them at 24" high and then fertilize and water them well on into the fall. Doring this causes the canes to "star-burst" where they were cut and they put out a number of new growth new limbs that will be laden with fruit next spring..AND THEY ARE NOW SO EASY TO PICK OF THE TOP OF THE PLANT.
One caution, on some varities that are quite vigorous in growth, new canes may immerge fron the ground and grow right past the starburst that you hae created: as they grow past your trimed tops just whack them off at approximately the same heights and your picking chores will be very simple next spring.

Rasberries should be pruned within a week of the last fruit being picked. It is OK to prune them when dormant but you will not have as many berries next season.
Prune just after the fruit is picked and this allows the plant to put on some new growth before cold weather.

You can either prune as soon as canes are completely dead or wait until February. Prune down to approx 2 inches. February could be safer if you live in a colder area because pruning cuts will not be so exposed to cold then.

Now would be a good time to prune autumn fruiting raspberries as they fruit on this year's growth. Summer fruiting raspberries fruit on new growth from last year.

I have just done mine (November) Every year I cut them down to within 3 inches of the soil,they then grow back to how they were and produce masses of fruit.

If you cut them down to the ground now, you will get a large single crop next September. Otherwise you will get a small crop in July and a small crop in September.
