These websites may help you with ideas (two are tour operators but even so, they may have some ideas you hadn't considered)
http://www.lonelyplanet.com/
http://www.explore.co.uk/worldwide/index.jsp
http://www.gapadventures.com/
http://whc.unesco.org/ .

A few suggestions of mine (places worth visiting even if you do not take up the activity):
Hiking to the Buddhist temples in the mountains around Seoul, South Korea;
Black Water rafting in Waitomo, New Zealand;
Canoeing in Katherine Gorge, Australia;
Trekking in the Peru (the Amazon from Iquitos, Colca Canyon from Arequipa amongst others);
Visit Thingvellir National Park to see the Atlantic Rift in Iceland.

I always tend to go off the beaten track to countries that I know not many British people will go to. Some of these places are: Alaska [beautiful and not as cold as everyone thinks it is], Honduras, Nicaragua and Guatemela [Central America].

Instead of Thailand what about Cambodia or Vietnam, Nepal or Tibet? Everyone goes to Thailand. Borneo is also supposed to be beautiful....

I'm going to Rwanda and into Uganda in December to see the mountain gorillas but these sorts of adventure [danger] holidays aren't for everyone....
Enjoy yourself wherever you go!

These places are not off the beaten track, but I've been to both and LOVED them - well worth visiting.

Goa - try Candolim - great food, great people, stunning scenery, cheap as chips

Langkawi (Malaysia) - stunning scenery and wildlife, even lovelier people, lots of exciting stuff to do and see

Enjoy your travels

One of the most amazing places to go that time of year is New Zealand, particularly the South Island. It will be winter out there and the fjords and glaciers make great scenery and you can go on boat rides and glacier treks which would be fun.

I suggest you to consider the Mediterranean countries such as Spain, Italy, Greece, Cyprus, etc.
Beautiful beaches, friendly people, quality services in most cases, great hotels for all budgets, tasty foods, warm weather.
Sure you have to consider a lot of details before traveling.
