The real Alastor "Mad-Eye" Moody did not serve on staff, although this was not discovered until June, 1995. The teacher everyone thought was Moody was actually Barty Crouch Jr. in disguise. Still, the real Mad-Eye is counted as a spectacular example of the supposed jinx on the Defence Against the Dark Arts job.

Minerva Mcgonagall teaches Transfiguration, Flitwick teaches Charms,Hagrid teaches Care Of Magical Creatures, Vector teaches Arithmancy, Sybill trelawney teaches Divination , Horace Slughorn teaches Potions, Madam Hooch is the flying insructor ,Professor Sprout is The Herbology teacher, and the last Defence against the Dark Arts teacher was Snape,Professor Binns teaches History Of Magic, Professor Sinistra teaches Astronomy, Madam Pomfrey is the nurse .Professor Dumbledore is the Headmaster , upto the end of sixth book.

Professor Dumbledor - Headmaster, doesn't exactly teach anything, except for life lessons.
Professor McGonagle - Transfiguration Teacher, Housemaster of Gryffindor; shows students how to turn animals into cups.
Professor Snape - Potions Teachers, Housemaster of Slytherin; eye of newt, double double toil and trouble, that kinda stuff.
Professor Sprout - Herbology Teacher, Housemaster of Hufflepuff; informs students of all the plants like mandragoras and such.
Professor Trelawny - Divination Teacher, teaches students how to read tea leaves and predict the future.
Professor Flitwick - Charms Teacher, Housemaster of Ravenclaw; wingardium leviosa! ron says it wrong.
Professor Hagrid - Care of Magical Creatures Teacher, Keeper of the Keys, Groundskeeper, Gamekeeper; shows students how to react to magical creatures.
Argus Filch - Caretaker, scary and has a cat named Mrs. Norris
Madame Pomfrey - Nurse, takes care of unusually sick children
Professors Lockhart, Lupin, Quirrell, and Umbridge - Defense Against the Dark Arts Teachers, all tought how to defend one self against evil magic.

Wow, very detailed answers. Dumbledore is the headmaster and Hagrid is the substitute teacher for a while. Snape is very msyterious .
