Theres four for the PS2-Final Fantasy X, Final Fantasy X-2 and Final Fantasy XII. I started with X, and its a great game to introduce you to the final fantasy series. And X-2 is the sequel to Final Fantasy X.
The fourth Final Fantasy game, is online based. Final Fantasy XI, if you want to play a MMORPG, then I'd recommend Final Fantasy XI.
I started with Final Fantasy X, and it got me hooked into Final Fantasy and from there I got FFVIII, FVII and all the other games. Its a really great RPG series, and Final Fantasy X, is a great way to break in and it makes the other games easier and more understandable.

The Final Fantasy games are connected in name and content only and do not extend a continuing storyline in any way so it does not matter which game you play first. There is one exception, Final Fantasy X-2, which is a sequel to Final Fantasy X. Final Fantasy XI is also a side-game of sorts since it is an online MMORPG.
What game you should play first really depends on what kinds of games you like. Without knowing that, it's extremely difficult for me to make any recommendations. Popular favorites tend to be Final Fantasy 7 and Final Fantasy 10.
My personal recommendation would be to start with Final Fantasy 9 which is available for PS1 and will play on PS2.

If you're someone who has played turn-based, strategic RPGs before and loved it, Final Fantasy 4 to 10 are good ones to start off with. I do recommend Final Fantasy 10 though, as its easy to learn, uses the PS2's power to the max in terms of graphics and game play and has a good plot.
However, if you're someone who prefers action-RPG hybrids, try either Final Fantasy 10-2 or 12. Final Fantasy 10-2 is a direct sequel to Final Fantasy 10, and has a real-time battle system, but still has turns in battle. The game is very non-linear with a whole lot of side quests. Maybe its just me, but the game is slightly girlish. Final Fantasy 12 is the newest one. It improves on FF10's graphics, has a new story, an all-new real-time battle system and has side quests too.
To sum up, pick either Final Fantasy 10 for a classic RPG experience or pick Final Fantasy 12 for a fresh, action/RPG hybrid experience.

start off with a taste of perfection. jump right into the double digits. then you can always go down the list and be retro.

3 or 7 are the best. But you could goinany order becuz they are different. but those two are definitely the best.
