Original orchestral soundtracks that have been most effective and that can be listened to without the movie and still hold up as individual works would include Gladiator (Hans Zimmer), Lord of the Rings 1 and 2 (3 was much more atmospheric and etheral), and the Star Wars Original Trilogy which really kick started the resurgence of the bombastic orchestral film scores. Others that are pretty classic are things like The Blues Brothers, Jesus Christ Superstar and Les Miserables.

The Dogtown and Z-boys documentary soundtrack is the best rock soundtrack ever IMHO.
However if you want something more tame try out the soundtrack for Ladder 49 or Purple Rain
