Run a spyware or antivirus removal program to check for keystroke loggers.
Keystroke loggers are programs that log everything that is typed on your computer. It's possible he's installed one on yours.
Also, change your alternate e-mail address that you have listed on your current e-mail profile. It's possible he has the password to this e-mail address, and when you change the password, he simply requests that it be changed, and a new password is sent to the alternate e-mail addy.
Also, changed the answer to your "secret question". It's possible he knows the answer and is using this method to change your password.
Sorry if I don't sound completely coherent, but I'm about to fall asleep.

If your boyfriend is looking at your EMail it sounds like he is insecure. You need to tell him to stop, it is an invasion of your privacy. What do you think it will be like further down the road. I think you need to sit down and think long and hard about this. How long has this been going on? Have you asked him to stop before? Is it getting worse? Does he confront you about your EMails? Does he get angry? These are all bad sign's if you answer yes. Consider the facts and choose the logical action. It's your life and I can't tell you what to do, but I would not stand for it. I would end the relationship, But that is me. "PEACE"

Change your password periodically, and do not save passwords. Get a new friend.

Try changing your security question that you would be asked if you had lost your password on the account.

He obviously knows the answer to your "secret question" and he gets your password that way.
I would change my question, my answer and my password
